Yes, markets such as Jade Market, Ladies Market and Stanley Market all open on "Public Holidays" such as Labour Day, Christmas Day and so on.

Only the Chinese New Year holiday closes some market stalls, Jade Market is probably closed on the first day. But Stanley Market is almost entirely open even then as it caters mostly to tourists.
