The Australian Consulate General in Hong Kong is located in Wanchai. It is in Harbour Centre on the 23rd and 24th floors.
Telephone them at +852 2827 8881 to confirm, but generally their opening hours are normal Hong Kong office hours, closed on public holidays.
The visa office is on the 24th floor and is open at 8:30 in the morning but closes at noon.
They do encourage you to submit your applications on-line, it isn't necessary to visit in person for the majority of cases.
