I am visiting HK next week on business and have been told the Ching Ming festivat is on the Saturday - I just wondered what the festival was about?

It's a day to show respect to the ancestors of your family by visiting and cleaning their grave site, and leaving offerings to their spirits.

As a tourist you won't see any impact unless you are visiting a place with a lot of cemeteries. That isn't as unlikely as it sounds though as they tend to be placed in hillside countryside locations which you may visit for the view for example.
