To get a Visa to China as an Australian you should check with the "China Travel Service", which is the official representative in Hong Kong. Check their website for contact details. http://www.ctshk.com/english/

The document you need vary from time to time, so actually check with them and don't rely on something you've read elsewhere! Even after consulting their website sometimes you find when you turn up at their office they want some other document, I'm afraid both communist countries and immigration departments are famous for bureaucracy and when you have the immigration department of a community country it is time to watch out!
