Is there a discount available or any cheaper options which are just or almost just as good as the express train? Looking at the map it seems the MTR is similar right?

Nothing can beat the Airport Express in terms of speed or comfort. If you want to save the money then the MTR is the next best option. As you said it is a similar route and train, but without the comfortable seats and a lot more stops which makes the trip considerably longer.
