Well if you don't spend too much time on each one, then yes. Remember you want to be at the peak around 6PM so you can see it both in light and in dark. Have dinner up there. As you need to back at the airport by 8:30 that should be your last stop. As shops in Kowloon may not be open very early you want to do your outdoor activity on Lantau (what exactly do you want to see?) first, then shopping after lunch.

As time is tight take the Airport express train.

6:30 land
7:30 cleared and take train
8:00 Arrive HK station and walk to pier (10 minutes), admire IFC II while waiting for ferry
8:30 Ferry from Pier # 6
9:30 Lantau - bus to Big Buddha?
11:20 Ferry back to HK
12:30 Star Ferry to TST
1:00 Lunch either in Chinese restaurant in building next to clock tower (forget what it is called) or in US restaurant like California Kitchen or BLT in Ocean Terminal
2:00 Walk up Nathan road as far as Kowloon Park, then take taxi back to Star Ferry
5:00 Star Ferry to HK again
5:15 Catch buss outside Star Ferry to The Peak Tram
5:30 Tram to The peak
6:00 Observation deck for pictures in the daylight
6:30 Early dinner
7:30 Observation deck for pictures in the dark
7:35 Rush to taxi back to HK Station
8:00 Airport express back to Airport
8:30 Checkin

Should be possible -- remember to have plenty of cash available and film for the camera! Smile

That's a great list ExExpat, thanks for sharing that.

I'm not sure what our visitor might want to do on Lantau though, appart from the BB as you suggested. With limited time I'd rather spend it in an interesting corner of the island like Sek Tong Tsui or visit Ocean Park.
