I am hearing that the 'Dim Sum' is the proper breakfast food in Hong Kong. But in my hotel booking they have "international buffet". How can be having the real Chinese breakfast of dimsum? Thank you for your advice.

There are many restaurants in Hong Kong that serve dimsum for breakfast. The "international buffet breakfast" that a good hotel in HK might serve probably includes some dim sum items, however for the full experience you'll want to go to a dedicated dim sum restaurant.

The City Hall Maxim's Palace restaurant is a popular place for the visitor to Hong Kong to experience Dim Sum. It's very authentic, yet also "tourist-friendly". Unfortunately it doesn't open for breakfast so a brunch when it opens at 11am may be your best option. Don't arrive after 12:30 though unless you are willing to wait a long time for a table, it gets extremely busy at that time!
