Yes you will see plenty, it will be light when you look out of the plane as you land but there isn't a lot to see on the incoming flight path. Mostly sea, islands and hill sides of lantau just before you land.
On the train into the city you'll see more but of course it'll be much later by then. Actually though the train is great the view from the road is slightly better as it doesn't go into tunnels so much and it goes over the bridge instead of into the bridge.
