Weather in early January in Hong Kong is some of the coldest, temperatures will be down to 10C or even lower. If you are lucky though it can still have sunshine and so be quite nice for sightseeing.
In fact blue skys are quite common in Jan compared to some other parts of the year.
It rarely rains very much in January in Hong Kong.
As it is cold and many places here are not heated you may wish to take plenty of warm clothes, jackets etc. Although it is heated in the MTR and in large hotels you will find that shops, some arcades, busses, taxis and so on are generally not heated
