It's a very plush hotel for tourists but more like for business travellers because it's a few minutes walk to the Hong Kong Convention and Exhibition Centre.
I haven't stayed there but I did have my Christmas buffet lunch there for a few years. I went to the Tiffin Lounge on Christmas day in 2001, 2006 and 2007. Sumptuous buffet, super high ceiling, no noisy shows, just pianist playing Christmas songs. Father Christmas visiting each table to give presents to children - a pleasant and relaxing way to spend your Christmas. We went to the ballroom of Grand Hyatt in 2002 and 2003 because we thought some children shows will help to entertain our little one. In 2002, they have the Scotty and Lulu kid show and it was a big success. The guys are funny and entertaining. But in 2003, they have miscellaneous local kids singing and dancing groups to perform and it wasn't that attractive. The buffet food in ballroom is even better than the Tiffin's! They have loyalty program called Hyatt Gold Passport. You may want to consider to join if you plan to visit Hong Kong often.
